The name "TOUSUI" means "ten IKI（sophistication）," or a collection of numerous "sophistication".
The name "TOUSUI" also includes the meanings of "to gather charm," "water permeates," and "euphoria. It has various word meanings that represent the thoughts of all people involved in and tasting this sake.

IKI is a word that originated in the Edo period and refers to an aesthetic sense (aesthetic concept) that has changed over time. It is a peculiarly Japanese expression for the spirit of amusement and the refinement of one's appearance and behavior. It also means unadulterated purity.
This top-quality junmai daiginjo is made from 100% Yamadanishiki grown in-house by the Yachiyo sake brewing and polished to a 27% rice polishing ratio.
By cutting down the source of miscellaneous flavors to the utmost limit, we have created a clear, crisp taste with an elegant sweetness that is the true essence of rice.
It also has a gorgeous aroma like apples and strawberries due to carefully selected yeast.
The origin of this brewery dates back to 1887, when the Kaba Brewery was founded by building a brewery along a tributary of the Abugawa River that flows through Hagi City.
It is rare in Japan for a brewery to grow its own sake rice, and "Yamada-Nishiki" is grown with reduced use of agricultural chemicals.
It is highly regarded as a high quality rice with low protein content, which can cause a miscellaneous taste in sake.
Ms. Kaba is a 5th generation Touji. Since moving to Tokyo, she has been committed to preserving sake culture and is one of the few female toji's in Japan to take over as the fifth generation, and has introduced many new brands.
She has also made inroads into foreign markets and is committed to the future of the sake industry.
"TOUSUI" was created to convey not only the charm of Hagi City's sake, but also the rich culture and history behind it, and was completed in collaboration with an artist from the region.
Mr. Tamura is a line drawing artist active in Hagi with a style of fine, dense lines that evoke the dynamism of animals and plants. This time, we commissioned him to create a work for TOUSUI under the theme of "scattering charms in the city of Hagi.
The artwork on the TOUSUI label and packaging is truly a breath of fresh air from Hagi. We hope you will enjoy the excitement created from the fusion of sake and art.

The sleeve is designed and developed by dividing Mr. Tamura's original line drawings into 1/1000 scale pieces, so that no two pieces are alike.

The bottle cases are designed in 1,000 different ways to depict the city of Hagi, and each case is individually dyed at Iwakawa Hatten, a company that produces traditional dyed works such as the "big fish flag.
Through millimeter-by-millimeter prototyping in the production of the bottle cover, we were able to slow down the temperature change of the sake to be kept warm, allowing the customer to enjoy the change in taste depending on the temperature. This original bottle cover is a one-of-a-kind product that is the result of Hagi's meticulous attention to detail.
